Ahhh gawd, my sister and I thought this video was so hilarious in 2007. I think Tina could still recite it in its entirety we watched it so many times. Hey, it was 2007 youtube parties were limited it was this, Salad fingers and Charlie the unicorn over and over and over. You remember.
Anywhooters, Heres a recipe that you can use to make all these muffins. Except the animal muffins, let's keep it vegan you guys.
*Note 9 out of 10 vegans agree human blood is vegan if they had it coming to them.
2 c flour
0.5 tsp salt
3 tsp baking powder
0.5 c Sugar (brown,white whatever)
1 Mushed banana (or 0.3c pumpkin puree or applesauce)
0.25 c Oil (flax, walnut or normal veggie oil)
1 tsp vinegar (white or apple cider)
0.75 c.Soy milk (or rice,almond whatever, you can also use water here if you have too)
1.5 - 2c.Whatever! (apples, cranberries, raisins, peaches, nuts, chocolate chips, fire ect.)
Optional
*1 tsp spice (cinnamon/ ginger)
*1 tsp Vanilla
1.Pre heat oven to 350
2. Mix the dry ingredients in one bowl
3. Mix the wet ingredient and your 2 c. of whatever in another bowl
4. Stir together until just mixed bake in muffin tins for 35-45 minutes.
Notes -
- This only makes 6 big muffins - so if your baking for a crowd or pot luck definitely double it.
How to mess this up -
- Without eggs vegan baking needs help rising, that's why you see more baking powder called for, and often the addition vinegar for extra bubbles. But as you remember from grade school NaHCO3(s) + CH3COOH(l) → CO2(g) + H2O(l) + Na+(aq) + CH3COO-(aq) happens quickly, so once you combine the wet and dry you need to work quickly. If you mix it and stop to putter around, if you over mix it, or if you put it in an oven that is not preheated the muffins will be moist dense little muffin pucks. more like brownies than muffins. Still edible but . . .pucky.
- You can replace up to 0.5 c of flour with other grainy stuff such as oatmeal, wheat germ, bran, or cornmeal. but if you sub out more than a 1/4 of the flour things start getting weird. Like crumbly, crunchy grainy weird.
