Cookie - Fruit -  Crumbs
I Have No Idea What I'm Baking shirt from Tee Turtle - Daily Shirts

Whats a platz? you will see - the base is something between a cookie and cake - like a sweet biscuit. topped with fruit and crumbs. the original recipe* calls for 3 cups fruit and 3 cups crumbs but you can play with that a bit I like more fruit and a little less crumbs.   

Its a simple forgiving recipe that you could sub most of the ingredients and it will still turn out. Like everything I make :P

The original recipe calls for plain fresh chopped rhubarb which is lovely - but could use any fruit.

For the base and fruit 

2 cups all Purp 

1/4 C Sugar 

2 Teaspoon baking powder 

1/4 C Butter type fat 

1/2 C Malk

1 egg replacement (flax or starch)

1 teaspoon vanilla 

3-4 C chopped fruit 

 

Crumb top 

1.5  C Flour ( can sub some amount of almond or other)  

1/2 C Butter type fat  

1 C Brown sugar 

1 teaspoon spice (cinnamon or pumpkin pie spice)  

 

Total - 3 C total Crumb material 

I mixed half and half with graham cracker crumbs turned out well 


Instructions 

For base and fruit 

preheat to 375 

8X8 grease pan

in medium bowl - comibine  dry ingredients 

prep egg replacer

add butter to dry ingredients - cut in until crumbly

add wet ingredient - malk, extract, egg replacer- Mix 

press into pan 

cover evenly w chopped fruit

 

For Crumb top 

Using the same bowl mix up the crumbs 

Sprinkle on top covering every thing  


Bake for 30 mins until golden brown
