Lentil Pumpkin Taco Filling

 Taco filling for filling your guts.



1 Yellow Onion Diced
2 Cloves Garlic  Diced
2.5 c. Cooked Lentils
1 c. Canned pumpkin (plain!)
1 c. Ranchera Sauce (or any Salsa)
1 c. Water 
1 Taco Seasoning    

Optional- 'Cheeze' (like Dayia) and pickled hot peppers

1. Saute onion and garlic in a splash of oil until fragrant
2. Add lentils, seasoning and water and let it come to a boil
3. Add pumpkin, salsa and season to taste - allow it to simmer to your desired consistency
4. Top with melty cheeze and/or diced hot pickled peppers

Serve out of the pan, with crunchy or soft tacos, hot sauce and some kinda cool crunchy topping.
