So Lazy, So Cheap, So much you can do with the leftovers.
2 onions diced
6 cloves garlic minced
1/2 can of chipotles sliced
3 stalks celery diced
2 tsbp chilli powder
1 can red kidney beans (drained and rinsed!!)
1 can mixed beans (ditto!)
1 can spaghetti sauce
1 can diced tomatoes
2 peppers (green, red, yellow, whatever.)
1 Preheat a soup pot over medium high heat. Saute onion, garlic & celery in oil w salt until translucent, (about 3 minutes). Add chili powder and saute for another minute. Add beans and cook for 3 more minutes or so.
2 Add diced tomatoes and spaghetti sauce raise to a boil then lower heat and allow to simmer for like 40 min (at LEAST 20 mins). Add peppers like 5/10 mins before your going to serve.
That's it !
That's the basic recipe but you can add lots to it. Such as . . .
Garnishes: Vegan cheese/ sour cream, chives, cilantro, jalapenos. . .
Beans: Add a cup or 2 of TVP with or instead of the mixed beans
Veggies: Add with or instead of peppers, a cup of frozen corn, diced okra
Serve with: Nacho's, corn bread, garlic nannn, or flat bread
use leftovers for chili dogs/fries/nacho's/breakfast wraps
