Beet & Cabbage Soup

It's Borscht-ish. Soup out made out of whats cheap in winter.

2 tbsp Oil
2 Onions
4 Garlic Cloves
1 tsp thyme
0.5 tsp Cayenne 
2 tbsp Tomato paste
1 tsp Pepper
2 tbsp Red wine vinegar
9 c. Veggie Broth 
2 c. Beets Shredded or roughly busted up in a blender, Canned or Peeled
0.25c Cabbage shredded
1 Carrot shredded
0.75c Barley

1. In a large soup spot over med/hing heat sautee onions, garlic and thyme in oil until translucent- approx 3 min.
2. Stir in all the other things.
3. Bring to a boil and then simmer until barley and veggies are tender - approx 45 mins and salt/pepper to taste.

Serve with pseudosourcreme.
