Cheezy Broccoli Chickpea soup
1 onion diced
4 fat cloves of garlic minced
2 tbsp oil
2 stalks celery
2 potatoes
2 carrots
4 cups water
1 veggie herb bouillon cube
1 can chickpeas
1 head of broccoli (with stem)
0.3 cups of Nooch
0.5 cups soaked Cashews
1 Add oil garlic onion to pot fry until fragrant
2 Add celery potatoes carrots (all roughly chopped) fry for a couple of minutes
3 Add the bouillon cube to 3 cups warm water and then add to pot
4 Add chickpeas and cook until veggies are tender
5 Add cashews and chopped broccoli; when broccoli is tender use a hand blender to whirrr it up to desired thicknes
Don't have cashews? yeah there expensive. Try replacing it with 0.3 c soft tofu and 0.25 c oil. Make sure the tofu is blended well though
