Vaguely Cajun Red Beans
2 c dried Red Beans or the like (I used pinto) picked over and rinsed
3 tbsp oil
1 onion diced
1 green pepper diced
1 celery rib diced
4 cloves garlic minced
0.5 can of chipotles minced
2 tsps smoked paprika
2 bay leaves
1 tbsp red wine vinegar
1. Soak Beans.
3 . Add salt and vinegar.
4. Now thicken it. The original recipe said to boil another 30-60 mins but that didn't work for me so instead take a few cups of the beans add a tbsp of cornstarch and bled it then add it back, OR give it a quick buzz it with a immersion until its slightly thickened.
5. Serve with chives and hot sauce over rice- OR as burrito filling :)

- Either soak them in salted water (1 tbsp salt in 8 cups water) for 8 to 24 hours.
- "Quick soak" them. Add beans, salt and water to a dutch oven, bring to a boil and then remove from heat and let them sit one hour.
