Okay, so if you've been vegan for awhile you've got your own scramble down. Just like with eggs every ones got their own way of doing it. But if your recently cutting out eggs out of your diet because of THE HORROR or like, your cholesterol or whatever here's my Scramble recipe that you can start out with and eventually make your own.
1 tbsp oil
1 tsp cumin seed
1 Onion medium onion
3 cloves garlic
2 tbsp nutritional yeast
1 tbsp tumeric
1/8 tsp black salt
1 tsp salt
0.5 tsp smoked paprika
0.25 tsp ground cumin
As much fresh ground pepper as you like
1 pkg firm tofu
1-2 cups of chopped veg - whatever's in your fridge: mushrooms, spinach, tomato, peppers, zucchinis, jalapenos ect. ect. ect.
1 On a bigish fyting pan over med heat sautee the cumin, onions and garlic in oil until onions are translucent (approx 3 min).
2 Use your hands to crumble the tofu into the pan.
3 Stir all the spices into the mix, making sure the turmeric colours all the tofu.
4 Add all your veggies - stir it around until its steaming hot and the veggies are cooked to your liking, and taste to adjust the salt/pepper to your taste(obvi time will depend on which veg you use).
Goes well with toast or taters or in breakfast burritos and blah blah blah - you know how you like it
* optional- if you happen to have faux cheese sprinkle it on at the end, let it melt while still in the pan (1 min) and then serve.
