I was trying to think something in the 'Canadian' culinary tradition that I could make or eat. Something. . . bacon? nopers. tortier? no. Jellied Moose Nose? pass. Poutine? ew. I settled on this adaptation, probably bastardization of Habitant soup.
1 onion, diced
4 cloves garlic, minced
2 tsp dried savory
2 tbsp oil (veg or coconut)
1 tsp pepper
1 potato, diced
1 carrots, diced
2 celery stalks, diced
10 c. veggie broth
2 c. dried split peas
2 bay leaves
salt
1. In a large soup spot over med/hing heat sautee onions, garlic and savory in oil until translucent- approx 3 min
2. Add the pepper carrots potato's and celery stir for another 3 min
3. Add the veggie broth, split peas, and bay leaves - bring to a boil- and then simmer for 45 mins
4. Salt to taste and serve with fresh bread
