Squash Lime Soup

I <3 coconut milk and lime soups. And squash. And I got a sweet new hook up for maple syrup. Therefore; this soup.


1 large butternut squash

2 tbsp coconut oil
1 diced onion
3 cloves of garlic minced
2 tbsp of minced ginger
1 tbsp of red pepper flakes
Salt to taste

1/2 white wine or cooking sherry
3 cups veggie broth
1 can coconut milk
1/4 cup maple syrup
zest of one lime
1/4 cup lime juice

Green onions


Roast the squash at 425 for about 45 mins
Sautee onions, garlic, ginger, salt and chilli flakes until onions are translucent
Deglaze pan w 1/2 cup wine
Add the veggie broth, squash, coconut milk, maple syrup, lime juice, lime zest
Hit it with an immersion blender
Garnish with green onions


Serve with bread, bread is life
