Hail Snyder Seitan


Seitan recipe from my fav cook book by Jo Snyder 

Dry

1.5 cup gluten 

0.5 cup flour 

1 tsp paprika

1 tsp onion powder 

1 tbsp garlic powder 

Wet 

1 cup stock 

0.25 cup soy sauce

2 tbsp liquid smoke 


Instructions:  

combine all ingredients and knead until dough is formed 

knead for 4 mins let rest for 10 mins then knead again for another 2 mins 

add extra moisture in stock or water as 'kneaded' LOL - should be a sticky firm dough 

let rest for at least 20 mins - covered so it doesn't dry out 


Variation 

Beefy: add 1 tbsp tomato paste and 2 tsp thyme - use beef or mushroom broth

Chickn'  fry small onion until translucent add w wet ingredients and add 1 tsp sage to dry
